1 tbsp. extra-virgin olive oil
1 lb. boneless skinless chicken breasts
Freshly ground black pepper
1/4 c. balsamic vinegar
2 cloves garlic, minced
1 pt. grape tomatoes, halved
2 tbsp. freshly torn basil
4 slices mozzarella
Balsamic + tomatoes + mozzarella = the chicken dinner for Dad.
-In a large skillet over medium-high heat, heat oil. Season chicken with salt and pepper and cook until golden and cooked through, 6 minutes per side. Transfer to a plate.
-Add balsamic vinegar to skillet, then add garlic and cook until fragrant, 1 minute. Add tomatoes and season with salt. Let simmer until soft, 5 to 7 minutes. Stir in basil.
-Return chicken to skillet and nestle in tomatoes. Top with mozzarella and cover with a lid to melt.
-Spoon tomatoes over chicken and serve. Happy Father’s Day!!
In an unprecedented time, we have been asked to stay away from other people as best we can through “social distancing” and we are not used to this especially during Father’s Day. If you are fortunate enough to be in the presence of your family this Father’s Day, we have compiled a few activities you can enjoy while “social distancing” from the rest of the world.
Go to the movies at home
The movie theaters may be closed, but your home theater is always open. Create your own theater with popcorn and drinks with your whole family. Come together and watch some classics that your father enjoyed as a child, or even binge watch a whole saga like “The Transformers” or “Harry Potter.” If you have a streaming service such as Netflix or Hulu, your choices are endless.
Play a Sport in the Backyard
If the weather is nice, grab the nerf football and go long. You and your whole family can enjoy a game of catch together. Father’s Day does not have to take place inside, take the family outside and enjoy the fresh air.
Visit Museums, Virtually
Yes, many of our favorite museums have gone virtual. Some museums you would not visit in-person like the Lamborghini museum located in Italy, your father is bound to love exploring some of the rarest super cars known to man throughout the virtual tour to begin your tour visit the site here. There are other museums showing virtual tours as well including the National Gallery Of Art and the Guggenheim Museum during this time.
Look through/Create Memories in photo albums
We are in the middle of a very memorable time in our history, and we are in it with our families. Break out the old photo albums from when your father was a child, share stories from times past. Now a days, everyone has a phone, create albums with your family and create an album on your phone or social media network that you can go back on later and remember this time, take photos with your father and members of your family that you can share with your friends and family.
Video chat with your father
We understand not everyone will have the opportunity to spend Father’s Day with his or her father. This may be hard, but video chatting with him, could still make his day. Father’s Day is about showing appreciation to your father, show him you love and appreciate him by video chatting with him share stories or play games through video chat if possible.
We are still at home so much and slowly reopening our country, Father’s Day is approaching, and we should still show our appreciation during this tough time. If you are fortunate enough to spend this time with your father and family, these activities and recipe will make for a great Father’s Day weekend.
